Acacia comes from smallholder farmers in the Guji zone of southern Ethiopia, a region that has earned global recognition for producing some of the country’s most expressive and fruit-forward coffees. Guji’s high elevations, fertile volcanic soils, and cooler climate allow coffee to mature slowly, contributing to layered sweetness, vibrant fruit character, and a soft, structured cup.

Coffee production in Guji is defined by smallholder farmers, many of whom cultivate coffee on just a few hectares of land alongside food crops. Cherries are harvested selectively by hand to ensure only fully ripe fruit is collected. This careful harvesting is essential to achieving the clarity and sweetness Guji coffees are known for.

As a natural process coffee, Acacia showcases the hallmark traits of the region. Ripe cherries are delivered directly to raised drying beds, where they dry whole under the sun and are turned frequently to promote even fermentation and prevent over-drying. This method intensifies fruit character and sweetness, resulting in a cup that is vibrant and juicy while remaining balanced and comforting.
