This Muxbal Decaf (pronounced moosh-ball), whose Mayan name means “place surrounded by clouds,” comes from smallholder producers in the Unión Juárez region of Chiapas. These family-run farms are rooted in quality and sustainability, cultivating coffee in rich volcanic soils under natural shade. Traditional practices and cooperative collaboration help preserve biodiversity and strengthen their communities.

This lot was processed using the Washed method, then decaffeinated through MC (Methylene Chloride) decaffeination—a trusted technique that gently removes caffeine while protecting the coffee’s natural sweetness and depth. The green beans are first steamed to open their pores, rinsed with methylene chloride to bond with the caffeine, then steamed again to remove any trace of solvent. The result is a coffee that’s 99.9% caffeine-free and true to its origin’s flavor.
