Los Pirineos is a historic farm in eastern El Salvador operated by fifth-generation producer Diego Baraona. Diego assumed leadership in 2020, carrying forward the legacy of his father Gilberto and more than 130 years of family experience in coffee cultivation. Today, Los Pirineos is widely recognized for its consistency, experimentation and thoughtful approach to quality.
The farm is located at 1,400 meters on the slopes of a stand-alone volcano, where sun-filled days and cool, constant breezes create an ideal environment for slow drying. Raised beds positioned between two peaks form a natural wind corridor, allowing for steady airflow that supports exceptionally clean and controlled Natural processing.
Bourbon is a cornerstone variety at Los Pirineos, valued for its sweetness, balance and approachability. This lot is referred to as Elite Bourbon, a name given by Gilberto Baraona to honor Bourbon trees on the farm that are more than 90 years old. These mature plants contribute to the depth and comfort-driven character found in the cup.
This coffee was processed using the Natural method. Ripe cherries were carefully selected and dried whole on raised beds, turned regularly to promote even fermentation and prevent overdevelopment. Slow, attentive drying preserved the coffee’s inherent sweetness while building rich chocolate tones, soft citrus and a round mouthfeel.
Alongside quality, Los Pirineos places strong emphasis on environmental and social responsibility. All processing water is sourced from collected rainwater. Coffee is shade grown beneath trees planted decades ago, supporting biodiversity and local wildlife. Approximately 60 people are employed across the farm, with a focus on consistent, year-round work.
