Mariana is a special limited-release offering from Aquiares Estate, one of Costa Rica's most respected coffee farms. Situated on the fertile slopes of the Turrialba Volcano and managed by Diego Robelo, Aquiares has become known for its commitment to sustainability, community development and innovative coffee production.

This lot features Mariana, a rare F1 hybrid variety related to Starmaya and one of the first hybrid coffees designed to be propagated by seed. Its resilience and cup quality have made it an exciting platform for experimental processing.

For this lot, ripe cherries were fermented anaerobically before being carefully dried in the fruit. This process amplifies sweetness and fruit character, producing a cup with vibrant tropical fruit, black cherry, red grape and juicy citrus notes, supported by a floral aroma and wine-like complexity.
