Rosados del Sur is a collaborative lot from five neighboring producers in Bruselas, Huila. Rather than showcasing these coffees as individual microlots, this offering brings together exceptional Pink Bourbon selections that are often produced in very small quantities. The result is a cohesive, expressive coffee that reflects both individual skill and shared values.

Pink Bourbon is increasingly planted across Huila for its cup quality and distinctive character. Its cherries ripen to a pinkish orange hue and are known for producing elegant, sweet coffees with bright fruit and a silky mouthfeel. While often described as a Bourbon hybrid, genetic research suggests it may be more closely related to Ethiopian landrace varieties, which helps explain its aromatic complexity and vibrant acidity.

All five producers are members of the Guácharos group, a tight knit community of friends and neighbors focused on quality and collaboration. The group frequently shares processing ideas, farming techniques and harvest support, helping elevate consistency and quality across each farm.

This lot is processed using an anaerobic washed method. Ripe cherries are fermented in sealed tanks before being depulped and continuing fermentation in low oxygen conditions. The coffee is then washed and slowly dried over several weeks. This approach enhances clarity while building sweetness and texture, resulting in a balanced cup with layered fruit, soft acidity and a comforting chocolate finish.
