Adelina Fallas represents the fourth generation of her family dedicated to coffee production. At 18, she began managing her mother’s farm and has since spent over a decade cultivating, processing and expanding her role in the coffee value chain.

Eight years ago, Adelina began processing coffee in micromills, and in 2025 she expanded her reach by purchasing from other local producers. Through her project, Amé Café, she offers farmers better prices than cooperatives or large companies, supporting fair-trade practices and community growth.

Her farm, El Cedral, located in the mountainous town of La Legua de Aserrí near the renowned Los Santos region, is Rainforest Alliance certified. Adelina is committed to preserving her family’s legacy while creating new opportunities for producers in her community.

In the cup, Adelina's coffee is clean and expressive with a balance of sweetness similar to dark chocolate highlighted by warm notes of orange and lemon.
